Roasting is optional on a cashew line and it is where margin gets added rather than protected. A graded white kernel is a commodity; a roasted, salted or flavoured one sells into retail at a multiple of that. The 50 kg batch is 15–20 kg of cashew in 30–35 kg of salt, so four to six batches an hour is 60–120 kg of nuts per hour — a value-add line rather than bulk export volume. Throughput scales by running longer, not by loading heavier.
How rotary drum roasting works
Kernels tumble inside a rotating drum over a controlled heat source. The rotation is the point: every kernel spends the same time against the hot surface, so colour develops evenly instead of scorching on one side. Salt-medium drum roasting — where kernels roast in a bed of salt rather than on bare metal — gives more even heat transfer and better flavour development than an oven, which heats the outside faster than the centre.
