Packing is the last thing that happens to a kernel and the first thing a buyer sees. It is also where twelve months of shelf life is either secured or lost: cashews go rancid in contact with oxygen, so the pack is not presentation, it is preservation.

Why nitrogen matters

Vacuum alone removes most of the oxygen; a nitrogen flush displaces what is left and keeps the pack from collapsing hard onto the kernels, which reduces breakage in transit. The combination is what delivers up to twelve months of shelf life at export quality. Without it you are shipping a shorter-lived product, and buyers price accordingly.
