How the salt-medium drum works

The TTQ drum roaster is a salt-medium roaster: the drum is charged with salt and the kernels roast within it. The salt is the heat-transfer medium, not a seasoning — it holds temperature evenly and conducts it to every surface of the kernel as the drum tumbles, which is why the roast is even edge to edge in a way a hot-air or flat-bed roaster struggles to match.

The 50 kg figure is the drum charge, not the nut load — a distinction that has produced some wildly optimistic throughput claims. Nuts are 15–20 kg of it, so hourly output is 60–120 kg of kernels and not the 200–300 kg/h that gets quoted.

Why drum roasting

Even, edge-to-edge roast

constant tumbling in a heat-carrying medium means no kernel sits still against a hot surface. Flat-bed roasting scorches the contact face before the top is done.

Batch-to-batch consistency

the salt buffers temperature swings, so a batch loaded into a drum that has just discharged behaves like the one before it. Colour consistency is what retail buyers actually audit.

Reusable medium

the salt is screened out and reused across many batches. It is a running cost, but a small one.

Low power

at 1 HP on single-phase 220V the roaster is a machine a small value-add operation can install without a three-phase supply.

Where roasting sits in the value chain

Roasting comes after grading, not before. A roasted kernel cannot be optically sorted or size-graded reliably, and roasting a mixed grade wastes heat on kernels that will be sold as pieces. Roast to order, against the grade the customer bought.

Shelf life

roasting drives off moisture and shortens shelf life relative to a raw kernel. Roasted product wants nitrogen-flushed packing and a shorter sales cycle.

What changes with roasting

Roasting concentrates fat and protein slightly by driving off moisture, deepens colour, and develops the aroma compounds that make the difference between a nut and a snack. It does not fix a poor kernel: scorched or broken kernels come out of the drum scorched and broken, only darker. The value added is real but it sits on top of grade, not instead of it.

Salt medium is not salting

A salt-medium roast is not the same as a salted product. The medium transfers heat and is screened off; salted cashews are seasoned afterwards, usually with an oil or brine carrier so the salt adheres. Buyers ask about this, and answering it correctly is worth doing.
